Cake roll with peaches and chocolate

During this time I really want to spoil me! Yesterday afternoon I was advancing half hour between cleanings atra and I made this roll peaches (I'm trying to give my bottom endless stocks of canned fruit in syrup). A spectacular result, came soft and fresh just like I wanted it and disappeared at the speed of light. Difficulty: easy Time: 10 minutes preparation + 15 cooking

Tools: electric mixer


  • 3 eggs
  • 70g sugar
  • 40g flour
  • 25g butter, melted cooled
  • 200cc of fresh cream
  • 20g sugar
  • 1 can of peaches in syrup
  • 25g of dark chocolate


Preheat oven to 180 °

Whip the egg whites until stiff. Stir in the egg yolks then slamming on low speed for 1 min.

Add the sifted flour to eggs, stirring gently to not remove everything.

Add the melted butter, finally spread the mixture on the baking sheet covered with wax paper, creating a square of 30 × 30 cm.

Cook for 9-10 min.

Meanwhile, lightly moisten a cloth with water and when the dough is cooked rovesciatelo the cloth gently pulling the wax paper.

Roll the cloth inside the dough and let it cool on a rack.

Whip the cream with the sugar, diced peaches drained and dried by leaving a larger and cut into dice and chop the chocolate into chunks.

Add the chocolate to the whipped cream and mix well.

Open the roll and spread the cream evenly. Spread the chopped peaches and close by joining everything well.

Keep in the fridge for half an hour and serve cut into slices.


Decorated slices with whipped cream, peaches and mint leaves.
